Ancient Grains of the Great Plains

The Northern Crops Institute, Fargo, ND, (NCI) supports regional agriculture and promotes value-added processing through educational programs and technical services. The NCI Ancient Grains of the Great Plains Handbook is planned to be a useful, accessible reference on ancient grains categories, descriptions, characteristics, and uses for the benefit of anyone participating in the ancient grains supply chain. The Handbook will be reference resource material for ancient grains educational programs, which will be conducted by NCI. Each of the chapter authors who contributed to the Handbook are recognized as leaders in the area of ancient grains production, promotion, development, and utilization. The Handbook is designed to increase awareness and, in due course, increase consumption of ancient grains for the improvement of human health and wellbeing.
